I think this is already possible. If you go to settings>Invoice and Order Defaults> within the general tab you can pick convert quotes to sales orders and have the default sales order be a product proforma (SOP). This proforma sales order can then be converted to a regular sales order at a later date. You can have quotes convert to sales orders and print a proforma invoice from this without it being a proforma sales order.
I'm starting on Sage 50 and this is one of the things I was trying to find out how to do. It is very important to be able to do this action.
